Cubano Pork Tenderloin

  1. Saute the onion and garlic in oil until fragrant, remove from the pan, and stir in the mustard and parsley. Season to taste.
  2. Slice the tenderloin along the long axis and open like a book, then pound until 1/2-inch thick. Trim the edges so the tenderloin is a rectangle, then fine chop the trimmings and add to the onion mixture.
  3. Spread the onion mixture on the tenderloin, then layer on the ham and cheese. Roll the tenderloin along the long axis and tie with kitchen string to form a roll. Season to taste.
  4. Sear the tenderloin in a pan, then roast until done. Remove from heat, let rest for 5 minutes, then slice and serve hot.
