Cubano Pork Tenderloin

Ingredients
- 1 lb pork tenderloin
- 1/2 C sweet onion, chopped
- 3 cl garlic, chopped
- 1/4 C fresh parsley, chopped
- 1 T Dijon mustard
- 8 oz sliced ham
- 1 C Gruyere cheese, grated
Instructions
- Saute the onion and garlic in oil until fragrant, remove from the pan, and stir in the mustard and parsley. Season to taste.
- Slice the tenderloin along the long axis and open like a book, then pound until 1/2-inch thick. Trim the edges so the tenderloin is a rectangle, then fine chop the trimmings and add to the onion mixture.
- Spread the onion mixture on the tenderloin, then layer on the ham and cheese. Roll the tenderloin along the long axis and tie with kitchen string to form a roll. Season to taste.
- Sear the tenderloin in a pan, then roast until done. Remove from heat, let rest for 5 minutes, then slice and serve hot.
